WHere is an easy take on a cocktail featured on the seasonal drinks list. Designed as a batch prepared mix that's loaded full of tastes associated with Christmas time, making it excellent for hosting a holiday party. Any leftover cordial to use in morning drinks, puddings, or to make additional servings of bikinis.
Bikini Recipe
Serves 10 guests
To make the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Premix (makes 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Directions
Making the Cordial: Combine all the components into a pan, heat until it reaches a simmer, stirring to dissolve. Then, remove from the heat and leave to reach room temperature completely. Pour to a clean bottle, seal and store in the refrigerator, where it will keep for about four weeks.
Preparing the Batch Mix: Pour every liquid ingredients in a sizeable container, allow it to infuse for 60 minutes, then filter it best through a fine cloth, so it's fully clarified.
When ready to serve: Add 85ml of your cocktail base into your mixing glass packed with ice, and stir lightly for one minute to cool it down. Pour into a cold coupe glass or a similar vessel, decorate with the cranberries and complete it with a quick spritz of the essential oil over the top.
